Lemon tahini dressing
Ingredients
1 garlic clove
1 tablespoon chopped parsley (+ more to garnish the vegetables)
1/3 cup tahini
1/4 cup extra virgin olive oil
Juice of 2 lemons
1/4 cup water
1 tablespoon honey (or maple syrup)
1 teaspoon dijon mustard
Salt and pepper to taste
- hisk together with a hand mixer or a blender all the ingredients until smooth and creamy. Set aside.
- Serve on a salad, roasted fall vegetables or on top of this Autumn Harvest Bowl.
